I made one of these for pudding a short while ago and never quite got around to posting the recipe.
![]() Recipe:- Pour several generous tablespoons of Golden Syrup into a ceramic or non-stick cake mould. I used a 25cm square one. Place it in a pre-heated oven to melt the syrup and you prepare the sponge mix:- 100g butter 100g caster sugar 100g self-raising flour 2 eggs Once the syrup has melted, swish it around the mould to cover it evenly, tilting it to coat the sides as well. Place fresh (or tinned) pineapple rings in the base then pour the sponge mix over the top. Bake for 35 mins or until cooked through properly. Eat warm or cold with cream, or just as it is.
